Annie's Gluten Free Nut Cookies

INGREDIENTS
20g Pecan Nuts
1 teaspoon vanilla
20g Walnuts
1 Cup Vitarium Gluten Free Plain Flour
20g Almond Meal
45 or so extra Whole Almonds
120g Butter or Margarine
1/2 Cup Gluten Free Icing Sugar
STEP ONE
Pre heat oven to 190c. Finely chop nuts. Cream butter and sifted icing sugar until light and fluffy. Add chopped nuts, almond meal and vanilla ess.
STEP TWO
Stir in sifted flour in two lots. Line baking tray will bakewell paper and place teaspoons of the mixture onto the tray. Give each one a quick roll into a ball with your hands, then place a whole almond on top, gently pressing it into the cookie.
STEP THREE
Bake on middle shelf of oven for 9 to 10 minutes, turning tray after 5 minutes. Cool on wire rack. Dust with icing sugar before serving. Enjoy! Store in biscuit tin for up to 3 weeks or so, if they last that long. They are very yummy.... You will be very surprised.
