Apple & Almond Cake

INGREDIENTS
200g butter, softened
1 1/4 cups caster sugar
4 eggs
1 1/2 cups Vitarium Self Raising Flour
1 1/2 cups (200g) Almond Meal
Zest of 1 lime
2 Granny Smith apples, peeled, coarsely grated
Vienne Cream
125g butter, softened
1 1/2 cups gluten free icing sugar mixture, sifted
2 tablespoons milk
200g flaked almonds
STEP ONE
Grease a 22cm round cake pan, line base and side with baking paper.
STEP TWO
Beat butter, sugar, eggs and flour with electric mixer, on low speed, until combined. Beat on high speed until mixture is smooth and changed in colour. Stir in almond meal and apples, spread mixture into prepared pan.
STEP THREE
Cook in a moderately slow oven, 160C for about 1 1/4 hours, or until cooked when tested. Stand in pan 5 minutes, turn onto a baking paper lined wire rack to cool.
STEP FOUR
Vienna Cream: Beat butter in a small bowl with electric mixer until light and fluffy. Beat in icing sugar mixture and milk in two batches.
STEP FIVE
Spread Vienna Cream over the top and side of cake, decorate with almonds. This cake is very popular as a birthday cake.
