Apple & Cinnamon Pancakes

INGREDIENTS
1 pack Vitarium pancake mix
600mL milk
1/4 cup brown sugar
1 tsp ground cinnamon
1 tsp pure vanilla extract
3 medium pink lady apples
STEP ONE
Whisk together the pancake mix and the milk till the mixture has thickened, then add the vanilla extract, cinnamon and brown sugar and whisk to combine.
STEP TWO
Peel, core and quarter the apples, then very carefully cut 2-3mm slices from each apple quarter (you want these to be thin so that they cook from their brief time in the pan).
STEP THREE
Heat up some butter or olive oil in a non-stick frypan over low-medium heat. Once the pan is heated up, pour over 1/2 cup of pancake batter and smooth out with the back of a spoon so the batter is in an even circle shape. Fan out some of the apple slices around the top of the pancake (or just layer then across) and cook for 1 1/2 - 2 minutes each side.
STEP FOUR
Once the underside of the pancake is golden and the top has set, VERY CAREFULLY flip the pancake over (try not to disturb any of the apple slices) and cook for another 1 1/2 - 2 minutes. Once the apple side of the pancake has cooked and the apples are lovely and caramelized, set aside and repeat with the rest of the batter.
STEP FIVE
Serve the pancakes warm, with a generous amount of maple syrup and gently whipped double cream :)
