Banana Fritters with Caramel Sauce

INGREDIENTS
Batter:
1 cup Vitarium Gluten Free Batter Mix
2 teaspoons baking powder
1 egg, lightly beaten
3/4 cup soda water
4-5 bananas cut into quarters
Vegetable Oil for frying
Sauce:
1 cup brown sugar
1/2 cup cream
100g butter
STEP ONE
Put Vitarium Gluten Free Batter Mix and baking powder in a medium bowl and stir to combine. Add beaten egg and soda and whisk until a smooth batter is formed.
STEP TWO
Put cut bananas into the batter and stir to coat well.
STEP THREE
Heat oil (about 2-3cm deep)in pan over medium heat until hot. Add banana pieces and cook for about 2 minutes until golden. Turn half way through cooking to ensure both sides are browned and crisp. Don't overload pan. Cook in a few batches if necessary. Remove and drain on a paper towel lined plate.
STEP FOUR
Sauce: Put brown sugar, cream and butter into a small saucepan. Stir over low heat until sugar is dissolved and butter is melted.
STEP FIVE
Bring to the boil and simmer for 2 minutes.
STEP SIX
Divide fritters between plates and pour sauce over. Can be served as is or with vanilla ice cream. Makes 4-5 generous serves.
