Banana and blueberry bread

INGREDIENTS

240g Vitarium Bread mix
200g frozen or fresh blueberries
10 ml vegetable oil
1tsp cinnamon
180 ml warm water
grated zest from 1 orange
4g yeast
2 teaspoons vanilla extract
2 large mashed bananas (1 cup)


STEP ONE

Dissolve yeast in 180ml of warm water, in a large bowl.

STEP TWO

Add 240g vitarium bread mix, vegetable oil and 1/2 cup pure maple syrup (this I forgot to list in the ingredients but is needed).

STEP THREE

Mix on a low speed for 5 minutes.

STEP FOUR

Cover with a damp tea towel and rest in a warm place for 30 minutes or until doubled in size.

STEP FIVE

In a seperate bowl combine 2 large mashed bananas, 1tsp cinnamon, grated orange zest and vanilla extract.

STEP SIX

Pour mashed banana mixture into the flour and mix until well combined.

STEP SEVEN

Fold in blueberries and dried apricots.

STEP EIGHT

Pour into a loaf tin lined with baking paper and bake for about 40 minutes.

STEP NINE

Remove bread from the oven and serve warm. It is great by itself or topped with sliced bananas and blueberries with a drizzle of maple syrup for breakfast. Also great toasted the next day, spread with low fat cottage cheese and a drizzle of honey.
