Choc Chip Quinoa Biscuits

How many would it make: 24 portion
Ingredients list:
3/4 cup Vitarium Plain Flour
3/4 cup Sorghum Flour
1/2 cup potato starch
3/4 cup Quinoa Flakes
1 1/2 cups brown sugar
1 1/2 tsp baking powder
1 tsp bicarb soda
1 tsp xanthan gum
1/2 tsp salt
2 tsp ground cinnamon
1/2 tsp each of ground nutmeg and ginger
1 cup Dark Chocolate chips
2/3 cup Rice bran or canola oil
4 tbsp Maple Syrup
2 tsp vanilla extract
2 eggs
2-3 tbsp warm water
Method:
In a bowl, mix together all the dry ingredients.
In a large jug, whisk oil, maple syrup and vanilla together.
Combine dry and wet ingredients together using a wooden spoon, the mixture will be sticky.
Lightly beat eggs and add to the mixture to form a thick dough.
Slowly add 2-3 tbsp of warm water till the mixture forms a biscuit style dough when pinched between fingertips.
Stir in chocolate chips.
Cover and chill for 1 hour. Roll a tablespoonful of mixture into balls, place on lined trays and flatten gently.
Bake at 180C for 22-25 mins till edges just start to brown and centre is firm. Cool on tray for 5 mins then cool on wire racks.

Cooked biscuits freeze very well
