Choc Dipped Choc-Chip and Pistachio Cookies

INGREDIENTS

100 grams butter
1/2 teaspoon baking soda
1/3 cup brown sugar
1/2 milk chocolate chips
1/3 cup white sugar
1/2 cup pistachios roughly chopped
1 egg
1/2 cup milk or dark chocolate for dipping
1 1/4 cups Vitarium Plain Flour
1/2 cup pistachios roughly chopped for dipping


STEP ONE

Preheat the oven to 180C. Lightly grease 2 pans or 1 large cookie pan.

STEP TWO

In a bowl, cream the butter and sugars together until light and fluffy. Add the egg and beat until combined.

STEP THREE

Add the baking soda to the flour and mix with a spatula until it is well incorporated.

STEP FOUR

Gently fold the flour mixture into the wet ingredients until it is combined. (do not over mix)

STEP FIVE

Add the pistachios and chocolate chips into the cookie mixture.

STEP SIX

With a small ice cream scoop, drop scoops of the cookie dough onto your baking tray. Gently press down with a fork.

STEP SEVEN

Bake for 15 minutes or until they are golden brown. Leave the cookies on the tray to cool for 5 minutes before transferring them to a cooling rack.

STEP EIGHT

METHOD FOR DIPPING Melt the chocolate in the microwave on hi for approximately 2 minutes Put the roughly chopped pistachios into a small bowl. Dip half of the cookie into the melted chocolate and then into the pistachio nuts. Place the dipped cookies onto some wax paper to set.
