Ingredients list:

1 Packet Vitarium Christmas Cake Mix
1/2cup oil
1/2cup treacle
pinch of salt
300g flour
4 tbsp brown rice flour
100g brown sugar
1tsp baking powder
pinch tartaric acid
1 tsp ginger (or to taste)
1 Packet Chocolat Melts
Mascarpone Cream

Method:

Mix Christmas Cake according to packet, do not cook leave in bowl, cover and set aside.

Pre heat oven to 160ºC and prepare a mini muffing tray.

Combine the dry ingredients.

Place the oil and treacle in a saucepan and put on a gentle heat and bring to boiling point.

Remove from heat and add to the dry ingredients. Mix until well combined. Tip onto a floured surface. Knead a few times, if it's to moist add a bit more flour.

Roll dough out to 5mm thick. Using a large round biscuit cutter, cut rounds and ease into mini muffin tray to form a cup.

Fill the cups to the top with Christmas Cake Mix. Topping half the filled cups with a chocolate melt.

Bake for 15min, remove and cool on wire rack.

To serve, top the plain cups with mascarpone cream.


Other tips:

If the dough becomes to hard/brittle to work with pop in the microwave for 30 seconds to warm.
