Coffee-flavoured Syrup Cake

INGREDIENTS
185g butter
2 Tbsp milk
3/4 cup caster sugar
3 eggs, lightly beaten
Syrup ingredient: 1 & 1/4 cups strong black coffee
1&1/2 cups Vitarium self raising flour
Syrup ingredient: 1/3 cup sugar
1/2 teaspoon xanthan gum
Syrup ingredient: 2/3 cup water
Syrup ingredient: 4 Tbsp rum or liqueur to taste
STEP ONE
Preheat oven to 180 degrees Celsius. Cream butter and sugar. Slowly beat in the eggs. Fold in the xanthan gum and sifted flour alternately with the milk until you have a cake batter consistency (add a little more milk if the mixture is too thick).
STEP TWO
Spray a baba tin with cooking spray and dust with Vitarium self raising flour. Pour the cake batter in and bake for 40 to 45 minutes or until a skewer comes out clean. Turn cake onto a wire rack to cool. Replace in tin when cool.
STEP THREE
To make the Syrup: Heat the sugar and water in a saucepan and allow to boil for 2 minutes. Add coffee and allow to cool. Flavour with rum. Slowly pour the coffee syrup over the cake. Refrigerate. Un-mold just before serving. Serve with whipped cream. This is a dessert cake that always impresses dinner party guests!
