Crispy Whiting Fillets

INGREDIENTS

500g fresh whiting fillets
1 cup Vitarium Gluten Free Batter Mix
1 1/4 cups soda water
2 tbsp finely grated parmesan cheese
1 tbsp snipped chives


STEP ONE

Place the Vitarium Gluten Free Batter Mix in a bowl.

STEP TWO

Add the soda water and mix to a smooth batter. The mixture will be quite frothy at this stage.

STEP THREE

Stir in the parmesan and chives.If batter is too thick add a little more soda water.

STEP FOUR

Dip whiting fillets in the batter mix and coat lightly.

STEP FIVE

Fry in hot oil until cooked and crispy.

STEP SIX

Serve with lemon.
