Crunchy Quinoa Biscuits

INGREDIENTS
125g Butter or Margarine
1 cup Vitarium Plain Flour
1/2 cup Sugar
1/2 tsp Baking Powder
1/2 cup Packed Brown Sugar
1/2 tsp Bicarb Soda
2 small eggs or 1 Large Egg
1/4 tsp Salt
1/4 tsp Vanilla
1 cup Quinoa Flakes
Extra white sugar
STEP ONE
Preheat the oven to 180 Degrees Cream the Butter and both types of sugar. When smooth, add the egg(s) and vanilla. Beat until smooth.
STEP TWO
Sift the flour, baking powder, salt and bicarb soda together. Add in small amounts to the creamed mixture stirring until each amount is fully combined before adding the next.
STEP THREE
Stir in the quinoa flakes. Drop in small amounts on to a baking tray covered with baking paper. Sprinkle each drop of dough with a small amount of white sugar. Press gently with your fingers until it is a bit flatter (really just to ensure the crunchy sugar topping sticks)
STEP FOUR
Bake for 8-9 minutes or until lightly browned. Cool for 5 minutes on the paper (I slide the paper off the baking sheet so I can get more into the oven) and then transfer to a cooling rack. Store in an airtight container. Keeps well. Note: you can add nuts or fruit to this recipe if you want.
