Double Chocolate Chip Shortbread

How many would it make: 8 portion
115g Butter, Diced
115g Vitarium Plain Flour
55g Gluten Free Cornflour
55g Caster Sugar
1/2 Cup Plain Chocolate Chips
1/2 Cup Milk Chocolate Chips
Preheat the oven to 160C. Grease a 9 inch loose bottomed fluted flan tin with butter.
Sift the flour and cornflour into a large bowl. Stir in the sugar. Add the butter and rub in with your fingers until the mixture starts to bind together (will take approximately 5 minutes).
Tip into prepared pan and press evenly with the back of your hand over the base. Prick the surface with a fork and then sprinkle with the chocolate chips and press lightly into the surface.
Bake in the oven for 35 to 40 minutes or until cooked but now browned.
Mark into portions with a sharp knife, cool in the tin for ten minutes, then transfer to a wire rack to cool completely.
