Fruit and Nut Breakfast Muffins

How many would it make: 9 portion

Ingredients list:

125gm butter or margarine
½ cup sugar
1 egg
1 cup vitarium self raising flour
¼ teaspoon each of cinnamon,nutmeg and ginger
1 orange
1 banana
½ cup fruit and nut mix


Method:

Preheat oven to 180c . Grease a 12 hole muffin pan. Cream together sugar and butter, add egg and spices. Skin orange and place in blender with banana until pureed.
Add blended orange and banana to mix , slowly add flour and fruit and nut mix, beat until combined.
Divide evenly amongst muffin tin. Bake for 15-20mins or until golden brown .
Makes 9 large or 12 medium muffins.
