Gluten Free Ricotta Balls.

Ingredients

250 g of firm ricotta
4 eggs lightly beaten
75 g of Vitarium Plain Flour
25 g of unsalted softened butter
Vegetable oil for frying
Golden Syrup or honey for drizzling

step one

Beat ricotta until creamy, then add eggs and beat until mixed. Add flour, a little at a time with the mixer on low and blend ingredients. Once combined, add butter and beat well. Set aside ready to use.

step two

Pour enough oil to half fill a saucepan and bring to medium heat. To test the heat of the oil, fry a small portion of the mixture, once the oil bubbles around the tester, it’s ready to go!


step three

Using two soupspoons, make a ball with the mixture and drop into the oil to fry until golden brown. Remove from oil and place on paper towelling to remove excess oil. Repeat this process until there’s no mixture left. Place ricotta balls in a bowl and drizzle with golden syrup or honey and serve with a scoop of ice cream.
