Gran's Apple Cake

INGREDIENTS
125g butter
1/2 cup sugar
2 eggs
1 Tablespoon milk
1 1/2 cups Vitarium Gluten Free Self Raising Flour
3 large cooking apples (about 190g each)
STEP ONE
Preheat oven to 180C. Grease and flour a 21cm ring tin.
STEP TWO
Peel and slice apples and cook over low heat with 1/4 cup water until soft. Drain and cool.
STEP THREE
Beat butter and sugar until creamy. Add eggs one at a time beating well between additions until well combined.
STEP FOUR
Add milk and stir with a spoon to combine. Add Vitarium Gluten Free Self Raising Flour and stir gently until well combined.
STEP FIVE
Spread half the mixture into the prepared tin and bake for 10 - 12 minutes.
STEP SIX
Remove from oven and spread cooked apple evenly over partly cooked base. Spread remaining cake mixture on top of apple. The mix is quite thick so just spoon evenly around tin. Gently smooth as much as possible. Don't worry too much if apple is not fully covered as the mix spreads as it cooks.
STEP SEVEN
Return to oven and bake for a further 25 - 30 minutes until top of cake is golden and cake is cooked through when tested with a skewer.
STEP EIGHT
Stand cake in tin for 10 minutes on a wire rack to cool before turning out.
STEP NINE
My Gran used to ice with mock cream but it is delicious served as is or with ice cream, cream or custard.
