INGREDIENTS

2.5 Cups Vitarium Gluten Free Self Raising Flour
1 Egg
40g Butter (softened)
Pinch Salt
1/4 Cup Gluten Free Icing Sugar
1/2 Cup Milk (approx)
extra Milk


STEP ONE

Pre-heat oven to 220. Combine flour, sugar and salt in a medium bowl. Using your fingertips, rub in butter until the mixture resembles fine breadcrumbs.

STEP TWO

Add the milk and egg all at once. Use a round bladed knife to mix together. Extra milk may be required at this point to achieve a dough-like consistency. Dough should be soft but not sticky.

STEP THREE

Turn dough onto a lightly floured surface and knead quickly and gently. Do not over-work dough. Form dough into a ball and flatten out to 2cm thickness using the palm of your hand. Using a lightly floured scone cutter quickly cut out scones and place them on a lined baking tray close together. Brush tops of scones with extra milk. Bake in pre-heated oven for approximately 10-12 minutes until golden and cooked through.
