Individual Plum Puddings

INGREDIENTS
1 packet Vitarium fruit cake mix
75g slivered almonds
1/4 cup brandy or fruit juice
90g butter or margarine
1 extra large egg
15ml cold water
STEP ONE
Soak fruit mix and almonds in brandy or juice overnight, or for a few hours.
STEP TWO
Pre-heat oven to 180*. Grease [or line with paper] a 12-hole muffin tin. Place in a large baking dish.
STEP THREE
Follow steps 1-4 on packet [I needed to add extra water to make a soft mixture].
STEP FOUR
Divide mixture between muffin holes, and smooth tops with a wet spatula. Cover muffin tin with a layer of baking paper then foil, loosely tucking it in to the ends. Carefully pour boiling water into the baking dish, until 3/4 full.
STEP FIVE
Bake for about 1 hour, till skewer inserted into the middle of the puddings comes out clean. Remove muffin tin from baking dish, and allow to sit for 5 minutes before removing puddings from tin.
STEP SIX
Serve with custard or cream. These puddings can be successfully frozen then reheated for about 30 seconds in the microwave.
