KFC (Korean Fried Chicken)

How many would it make: 4 portion

Ingredients list:

1 kg Chicken wings split
Marinade:
2 garlic cloves
1 tablespoon sugar
50 ml soy
50 ml mirin

Chicken Flour:
150 gm Vitarium Batter Mix
1 tablespoon garlic powder
1 tablespoon onion powder

Sauce:
1 tablespoon sesame oil
1 tablespoon chilli oil
1 long red chilli
1/2 onion diced
3 cloves garlic minced
50 ml glucose
50 ml ketchup
50 ml soy
50 ml mirin

Garnish with:
White and black sesame seeds
1 bunch coriander

Method:

To make the marinade, mix the soy, sugar, mirin with finely minced garlic. Marinade the chicken for 1 hr or overnight.
Mix 150 gm of Vitarium batter mix with the garlic and onion powder thoroughly.
To make the sauce saute the onion, garlic, and chilli till soft. Add the rest of the ingredients and cook on medium heat until reduced and sticky.
Toss the marinated chicken wings in the flour mixture and fry in vegetable oil at 180 degrees for 7 minutes or until crispy.
Toss the crispy wings with the sauce and the black sesame seeds.
Rip the coriander leaves and use as garnish

Very nice served with steamed asian greens and rice.
