Lentil Burgers

INGREDIENTS
450 grams green or brown Lentils
845 ml Hot Water
110 grams Gutter
1 finely chopped Onion
1 small Red Pepper
2 Carrots, grated
1 teaspoon Mixed Herbs
4 teaspoons Tomato Paste
2 cloves Garlic, crushed
1 cup Vitarium Plain Flour
1 Organic Egg
1 cup Milk
Day Old Bread
Generous hand of Sesame Seeds
Salt and Pepper
STEP ONE
Simmer lentils in a pot of hot water until mushy. This takes approximately 30 minutes. For extra flavour use a veggie stock cube. Once cooked, mash lentils together with a potato masher and add other spices or mixed herbs to your liking.
STEP TWO
For the mixture: in a frying pan, soften onion and garlic in olive oil for a few minutes until onions are translucent. Add the grated carrots, followed by the finely chopped red pepper. Cook for 5 - 10 minutes and put into the bowl of mashed lentils. Add pepper and salt, a beaten egg and mix well.
STEP THREE
Cooking: In a pan, add a glug of olive oil until the pan is almost hot. Put your burgers in the pan, and cook on a medium to low heat to avoid sesame seeds burning. Cook until golden and cooked through. This usually makes just over 20 burgers, depending on the size of your patties. Cook some or freeze some to use at a later time.
