Macadamia Ginger Slice

INGREDIENTS

125g butter
2 tbspn golden syrup
1/4 cup caster sugar
3/4 cup icing mixture (gluten-free)
1 cup Vitarium SR flour
1 cup macadamias, chopped
1 tsp ginger
1/4 cup finely chopped glace ginger
90g butter, extra


STEP ONE

Preheat oven to 180 degrees and line lamington pan tin with baking paper.

STEP TWO

To make base, beat 125g butter with caster sugar until light and creamy, then add Vitarium gluten-free SR flour and ground ginger. Spread evenly into tin and bake for 15-20 minutes or until browned. Leave to cool completely in pan.

STEP THREE

To make topping, combine 90g butter, golden syrup and icing sugar in small saucepan and stir over heat until smooth. Stir in nuts and ginger.

STEP FOUR

Spread hot topping over the cooled base and bake for a further 10 minutes. Allow to cool in pan, then refrigerate, before cutting into squares.
