Rustic Vegie Slice

How many would it make: 6 portion
Ingredients list:
1 medium onion (150 grams), finely diced
1 large garlic clove, crushed
1 large red capsicum (250 grams), chargrilled & then finely diced
1 medium zucchini (200 grams), grated
420 gram can of corn kernels, drained
1 medium carrot (150 grams), peeled & grated
2 tablespoons finely chopped parsley
25 grams grated parmesan cheese (1/4 cup, lightly packed)
55 grams (3/4 cup, lightly packed) grated tasty cheddar cheese
3/4 cup Vitarium Self Raising Flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon xanthan gum
4 large eggs, lightly beaten
1 teaspoon oil (to saute onions)
1/3 cup canola oil
Method:
1. Chargrill capsicum - line tray with aluminium foil, preheat grill to high, cut the capsicum in half & remove stalk, membranes & seeds. Cut into small wedges, flatten and place skin side up on tray and grill for 8-10 minutes until most of the skin has blackened
Remove from grill & place a sheet of baking paper over the top & a tea towel, leave to cool for approx 10min & after this time you can then remove the skin from the capsicum & discard and then finely dice the remaining flesh
2. In a heavy-based fry pan over medium heat add 1 teaspoon of oil, then saute onion stirring often for about 8-10 minutes, until softened and lightly browned.
3. Then add garlic to cook, stirring through for 1 minute then remove from pan & set aside to cool
4. Preheat oven to 180 degrees celsius and lightly grease (canola oil spray) an 18cm by 28cm rectangular baking dish or slice pan
4. Grate zucchini & carrot and using your hands squeeze mixture over the sink to remove excess liquid (this aids in preventing the slice from being too wet)
5. In a large bowl, combine the capsicum, corn, carrot & zucchini, parsley, cooled onion/garlic mixture, salt & pepper, parmesan and tasty cheddar cheese and with a wooden spoon mix to combine
6. Add xanthan gum & SR flour and mix through until just combined
7. In a small bowl, lightly whisk the oil & eggs and then add this to the other ingredients and stir until just combined
8. Pour mixture into prepared baking dish and spread evenly, place in oven & bake for about 40-45 minutes, or until slice is golden brown and an inserted skewer is removed cleanly
9. Allow to slightly cool & cut into squares of a desired size before serving as it is or with a side salad to accompany
Other tips:
If using a fan-forced oven you may need to adjust/reduce oven temperature
