Smoked salmon, rocket and fennel seed pizza

Ingredients list:
1 Packet Vitarium Bread Mix (G/F)
1 Tablespoon fennel seeds
6 Regular Bocconcini, halved
100g smoked salmon (cheap if you buy it 'loose' from a fish counter),torn.
small handful rocket, washed, and dried.
Olive oil for 'painting' base.
Lemon for juice.
Method:
(With the packet recipe, you can make up the whole mix, and divide the dough into half. With one half, make this recipe, and with the other half,create another masterpiece. You will then have two portions to share.)
To make the one portion (for this recipe):
Turn on oven to top temperature.Ensure shelf is set in top position.
Oil one (approximately 35cm) pizza tray.
Halve the mix, according to the proportions on the packet.
Mix according to packet instructions.
Pour dough on to prepared pizza tray.
Using moistened hands (see tip), smooth dough out to fill tray.
Place dough in a warm place until it doubles in depth.
Paint lightly with olive oil, and spread with fennel seeds.Cover with alumimium, and put on top shelf in oven.
Cook for 5 mins. Turn 180degrees, and cook another 5 mins.
Remove from oven, and place the bocconcini halves evenly on top.
Repace in oven for another 5 mins.
Remove (if convinced it's cooked). Ideally the cheese should not loose too much of its initial shape.
Cut into portions, then add the smoked salmon pieces, topped with the rocket.
Squeeze lemon juice over salmon.
Other tips:
1.One and a half teaspoons equals the required amount of yeast (for half the packet).
2.Have a bowl of water ready for wetting your hands, and this makes the moulding of the base easy.
3.When spreading the dough in the tray, be sure to move most of the dough away from the centre as this cooks slower than the outer, and if too thick can result in an uncooked centre.
4. A 'warm place' can be the griller tray -be sure to place pizza tray on the top of the griller tray,so that the heat from the oven is not too intense.
4.It's easier to cut the pizza into portions before adding the fresh toppings.
