Spicy Fruit Bread

INGREDIENTS
1 pack Vitarium Bread Mix
20 ml Oil
450ml Warm Water
7g Yeast
3/4 cup Dried Fruit
1/3 cup Boiling Water
1 tsp Mixed Spice
1 tsp Cinnamon
1/2 tsp Nutmeg
1 1/2 tbsp Brown Sugar
STEP ONE
Preheat oven to 50C. Soak dried fruit (I used figs, sultanas and cranberries but you can use anything you want) in boiling water. Leave fruit for 10 minutes.
STEP TWO
Make up bread mix as directed but before mixing, add sugar, mixed spice, cinnamon, nutmeg and 2 tablespoons of the water that the fruit has been soaking in. Mix bread as directed on the pack.
STEP THREE
Stir in the soaked fruit, draining any liquid off as well as you can. Place in a greased bread tin. Put tin in the oven and turn off the oven. Leave for 1/2 hour to rise. (you may not need to use the oven to help the dough rise, but it gives consistent results no matter what the temperature is in the house)
STEP FOUR
Take dough out of the oven and preheat oven to 180C. When warm, bake for 35-45 minutes. The time for baking can depend on how moist the fruit is so make sure the bread is not under cooked.
STEP FIVE
Remove from tin and allow to cool.
