Tripple Treat Cheesecake

How many would it make: 8 portion

Ingredients list:

Base:
1 packet vitarium choc ripple biscuits (made as directed)
30 gm butter (melted)

Chocolate layer:
½ cup castor sugar
100ml cream
150g dark chocolate, melted
2 tablespoons cocoa powder
250g cream cheese, at room temp

Vanilla layer:
250g cream cheese, at room temp
1/2 cup castor sugar
1 teaspoon vanilla extract
1 x 100ml cream
150G white chocolate

Raspberry layer:
Vitarium Raspberry jelly ( made as directed)


Method:

Base:
Process vitarium choc ripple cookies until they resemble fine crumbs add melted butter mix well and press into greased cheesecake tin.

Chocolate layer:

Whip cream until soft peaks form. Add melted chocolate, and cocoa powder. Blend well and set aside.
Beat the cream cheese and remaining sugar together. Fold in cream/chocolate mixture and mix thoroughly.
Pour into base and place in fridge while preparing next layer.

Vanilla layer:

Whip cream until soft peaks form. Add melted chocolate, and vanilla. Blend well and set aside.
Beat the cream cheese and remaining sugar together. Fold in cream/chocolate mixture and mix thoroughly.

Pour on top of chocolate layer and return to fridge.

Raspberry layer:
Make jelly as directed carefully pour over back of a metal spoon onto vanilla layer and return to fridge until jelly is set and cold or overnight.
