Tropical Delight

INGREDIENTS

1 packet Vitarium Gelatine Free Tropical Jelly
400ml boiling water
pulp of 2 passionfruit
1/3 cup finely chopped mango flesh
180ml evaporated milk


STEP ONE

Place contents of Tropical Jelly sachet into a bowl and add 400ml boiling water. Stir well to dissolve. You should have about 2 cups of jelly mixture.

STEP TWO

Pour 1 cup of the jelly mixture into a bowl and stir through the passionfruit pulp. Pour the mixture into 4 individual glass dessert bowls.

STEP THREE

Place the bowls in the fridge to set the jelly and put aside the other cup of mixture to cool and gel.

STEP FOUR

When the remaining mixture has cooled and is beginning to set, pour the very well chilled evaporated milk into the bowl of an electric mixer and beat on high speed until thick and creamy.

STEP FIVE

Stir the diced mango into the cooled jelly then slowly add this jelly mix to the milk as you continue to beat. Beat until well combined.

STEP SIX

Spoon the milk and jelly mixture on top of the passionfruit jelly already in the bowls and smooth the top. Return the bowls to the fridge until the dessert is thoroughly chilled and set.

STEP SEVEN

Delicious served as is or with a scoop of ice cream or whipped cream.
