Upside down pear cake

INGREDIENTS

1 tablespoon brown sugar
800g tinned pear slices
1 1/2 cups Vitarium bread mix (or plain flour)
3 level teaspoons gf baking powder
3/4 cup sugar
1 large eggs
1/2 cup milk
125g soft butter or margarine
To serve: honey, double cream or custard


STEP ONE

Preheat oven to 180 degrees.

STEP TWO

Grease a 20cm round cake tin and line the base with baking paper.

STEP THREE

Sprinkle brown sugar in the bottom of the tin.

STEP FOUR

Arrange pears flat side down.

STEP FIVE

Beat remaining ingredients in a medium mixing bowl for 3 minutes.

STEP SIX

Pour mixture over the pears and smooth the surface.

STEP SEVEN

Bake for about 40 minutes.

STEP EIGHT

Turn out onto a serving plate.

STEP NINE

Drizzle with a little honey and serve with cream or custard.
