Versatile Vitarium Mix

Ingredients list:
With slight variations this versatile mix will make fabulous gluten free
*Garlic, chive and chia breadsticks
*Egg bacon and cheese rolls
*Donuts
GARLIC, CHIVE and CHIA BREADSTICKS
Ingredients
½ cup water
¼ cup sunflower oil
¾ tspn sea salt
¼ tspn ground pepper
½ cup Vitarium Gluten Free Plain Flour
1 tspn xanthum gum
2 large free range eggs (700g room temperature)
1 tblspn fresh chopped chives
1 clove garlic (grated)
chia seeds (enough to sprinkle onto breadsticks)
EGG, BACON and CHEESE ROLLS
Ingredients
½ cup water
¼ cup sunflower oil
¾ tspn sea salt
½ cup Vitarium Gluten free Plain flour
1 tspn xanthum gum
2 large free range eggs (700g room temperature)
¼ cup diced gluten free bacon
2 tblspns grated parmesan cheese
DONUTS
Ingredients
½ cup water
¼ cup sunflower oil
¼ tspn sea salt
1/3 cup Raw sugar
½ cup Vitarium Gluten free Plain flour (plus a small amount to flour greased tray)
1 tspn xanthum gum
2 large free range eggs (700g room temperature)
1 packet of Vitarium Gluten Free Jelly crystals (flavour of your choice)
Method:
Garlic, Chive and Chia Breadsticks
Method
1. Preheat oven to 375 degrees (fan forced). Line a 26 x 38 (10” x 15”) baking tray with baking paper.
2. Place water, oil, salt and pepper in medium size saucepan and heat gently until water begins to boil. Reduce heat to low. Add xanthum gum to flour, sift together. Lift saucepan off stove briefly then quickly add flour to saucepan while continuously whisking. Place back on heat and continue to stir for 1 ½ minutes.
3. Place the hot mixture into a smart stick or food processor bowl. Add eggs and chive, Pulse until ingredients are combined.
4. Spoon mixture into one corner of a strong plastic bag. Trim about 1.5cm from the corner of bag. Twist top of bag. Squeeze onto tray in strips approx 7cm long or make a squiggle design of your choice. Sprinkle top with chia seeds
5. Place tray in preheated oven and bake for 25mins
This mix makes approximately 15-18 breadsticks. Please ensure all ingredients are gluten free.

Method

2. Cook bacon in microwave for approx 1 minute
3. Place water, oil and salt in medium size saucepan and heat gently until water begins to boil. Reduce heat to low. Add xanthum gum to flour, sift together. Lift saucepan off stove briefly then quickly add flour to saucepan while continuously whisking. Place back on heat and continue to stir for 1 ½ minutes.
4. Place the hot mixture into a smart stick or food processor bowl. Add eggs,bacon and 1 tblspn of parmesan cheese, Pulse until ingredients are combined.
5. Spoon mixture into one corner of a strong plastic bag. Trim about 2.5cm from the corner of bag. Twist top of bag. Squeeze onto tray mounds of dough approx 8cm long. Sprinkle remaining cheese on top of bread rolls
6. Place tray in preheated oven and bake for 25 mins
This mix makes approximately 10 rolls. Please ensure all ingredients are gluten free.
Donuts
Method
1. Preheat oven to 375 degrees (fan forced). Grease and flour a 6 ring donut tray
2. Place water, oil, salt and sugar in medium size saucepan and heat gently until water begins to boil. Reduce heat to low. Add xanthum gum to flour, sift together. Lift saucepan off stove briefly then quickly add flour to saucepan while continuously whisking. Place back on heat and continue to stir for 1 ½ minutes
3. Place the hot mixture into a smart stick or food processor bowl. Add eggs, Pulse until ingredients are combined
4. Spoon mixture into one corner of a strong plastic bag. Trim about 2cm from the corner of bag. Twist top of bag. Into each donut ring squeeze dough to form a full circle. Sprinkle top of donuts with cinnamon mix (below) jelly crystals (or cook plain and ice as below)
5. Place tray in preheated oven and bake for 20 – 25mins. Let stand for a few minutes before turning onto wire rack to cool.
Ideas for decorating donuts
Cinnamon mix - Mix together ¼ cup Raw caster sugar and 1 tspn ground cinnamon.
Coloured cocount Icing - Mix together 1 tblspn Vitarium Jelly Crystals with ¼ cup desiccated coconut, set aside. Place ¾ cup pure icing sugar, 1 tspn Nuttelex (or butter of choice) in small bowl (to create a coloured icing add 1 to 2 tablspns Vitarium jelly crystals to the mix). Add 1 tblspn hot water. Mix until smooth. Drizzle over donuts while still warm and then sprinkle on coconut/jelly mix
