Hot Jam and Chocolate Berlin Doughuts

INGREDIENTS
2 teaspoons of dried yeast
1 egg
1/4 cup of water
1 3/4 cups pf Vitarium batter mix
30g of butter
1/2 teaspoon of lemon zest
3/4 cup of milk
oil for deep frying
1 teaspoon of salt
3/4 cup of raspberry jam or your favorite jam in a squeeze bottle with pointed nozzle
150g of dark chocolate (gluten free), melted and in a squeeze bottle with a nozzle
1/4 cup caster sugar
1 tsp xanthum gum
STEP ONE
Melt butter and milk over low heat until butter is melted and set aside until lukewarm. Dissolve yeast in water, whisking until slightly frothy. Beat together yeast mixture, butter milk mixture, sugar, egg and salt. Whisk very well until frothy, put as much air in the mixture as possible. Add sifted flour, xanthum gum and lemon rind and whisk well until a slightly wet dough is formed. Cover and let rise in a warm spot until dough has increased in size (approx 1 hour)
STEP TWO
Turn out dough onto floured board and gently knead into a nice lump. Flatten dough out with your hand until around 2 cm thick. Cut out rings with a cutter or upside down floured glass (approx 4cm). Gently roll into balls and set aside on a plate on greaseproof paper. Makes approx 12. Cover and let rise in a warm place for 40min-1hour.
STEP THREE
Warm up your favorite jam and place in squeeze bottle. Melt Gluten free dark chocolate and place in squeeze bottle. Heat oil in pan for deep frying. Add a few doughnuts at a time and fry until golden brown, turning once (this takes a few minutes). Drain on absorbent paper and alternate injecting doughnut with warm jam and the next with chocolate. Dust with icing sugar and serve immediately!!!!
STEP FOUR
The reason there is only two in my photograph, is that they were all eaten before i had the chance to take the photo!! My daughter can not tolerate wheat and it is so nice to finally make her AWESOME doughnuts! I really hope you enjoy these for you and your family!
